Vegan Chickpea Scramble Breakfast Burrito

Who knew chickpeas were so versatile! We make these “eggs” when we’ve been eating a lot of tofu and feel like a bit of a change of palette (though the same spices in this recipe can be applied to a tofu scramble so give them both a try!)

The basic chickpea scramble recipe can be eaten alone as scrambled eggs, on avocado toast, or in a … * drum roll please * BREAKFAST BURRITO!

Chickpea Scramble


The main ingredient to this dish is the Chickpea flour, which can be found at almost any grocery store. Chickpea flour is a great source of fibre, helps improve heart health, stabilizes blood sugar, lowers inflammation and improves immune function, and is gluten free!

A key ingredient in this recipe is definitely the Black Salt or Kala Namak. The black salt gives this dish an “eggy” flavour and just the right amount of salt. It’s a little hard to find this ingredient in stores, but I was able to find my Black Salt on Amazon, and in a local organic store called Planet Organic.


You can add basically any of your favourite vegetables to this scramble mix like bell peppers, onions, spinach, mushrooms, etc!

Vegan Chickpea Scramble

Something to note about chickpea flour scramble is that you need to use a good quality non-stick pan, or use a fair amount of oil before adding the mix. The flour tends to stick to the bottom of the pan and can burn with the high heat. See the photo above to know how the scrambled chickpea mix should look when it’s all done!

The condiment options for your burrito are totally custom and almost endless. Personally I like to add vegan cheese, avocado, tempeh bacon, ketchup, mustard, and hemp seeds for some added protein! Simply layer these all up in your tortilla and roll it up. As a yummy final touch, toast both sides of your burrito in your pan until it begins to brown and you have yourself a delicious breakfast burrito perfect for Sunday brunch!
